SPRING DESSERTS

here at HowDoesShe, I guess now you know what is really on our minds!  Can you tell that we didn’t have our weekly HowDoesShe meeting last week planning out our posts?  Shelley was on vacation, so I am totally blaming her for us being a FOOD BLOG this week.  Don’t worry, next week we are bombarding you with creativity.

The filling for this Strawberry Parfait is so yummy, easy and versatile…I guarantee it will become one of your go to recipes.  My sis-in-law, Jodie was the first to introduce this to me and my family and now it is one of our absolute FAVES and requested at most family functions!  It originally came from my mom’s friend Barbara who layered it with blueberries, peaches, green grapes, mandarin oranges, strawberries and almonds.

I usually use it as a fruit dip for any kind of fruit, my favorite being blackberries and bananas.  Here I layered it with strawberries (cause they are in season) to make this parfait.  Look closely and you will see my hidden treat at the bottom….

yEp! OREOS.  I figure, people make oreo crusts for strawberry pie, why not a little OREO goodness at the bottom of my parfait!  And it WAS gOOd!!!

I’m going to call it…

Creamy DELICIOUS Fruit and OREO surprise

(okay, so there is a reason I don’t have my own cookbook:)

3 oz. cream cheese, softened

8 oz. strawberry yogurt (I’ve used other flavors with great results)

2/3 cup sugar

2 tsp. lemon juice

2 cups frozen whipped topping, thawed

1/4 tsp. almond extract

Beat everything but the whipped topping until smooth, add the topping and continue beating until thick and smooth.  Layer this mixture with fruit of your liking, but first…don’t forget to hide the oreo!

*you will want to double this:)

Now I am visualizing an oreo and banana parfait…mmmmmmmmmmm!

    yum!!! I love the idea of doing the oreo with it! We had strawberries over sponge cake last night for dinner lol now you got me thinking… how about using nilla cookies!

    My mother-in-law gave me a recipe for fruit pizza a while back and it is delicious. It has strawberries, blueberries, bananas, kiwi and star fruit (but you can put whatever you like) with a cream cheese ‘sauce’. the only problem is my fridge is not big enough :)

    I love strawberries! For like 2 months maybe we have had strawberries Strawberries also go well in fruit salad, frozenis good to. Have you ever tried frozen grapes?????????????? the BEST

    THis might seem silly, but when at first glance of the dessert cups, I thought it was cubed jello jigglers instead of strawberries. I LOVE jello and LOVE strawberries. I think my imagination was telling me something… I feel a craving coming on! (on second thought, maybe I’m pregnant!)
