Ill take seconds Chicken with wild rice soup

I know.  I know.  I am on a serious soup kick!  I am obsessed with soups in the winter.  Big chunks of goodness all in one hot little bowl.  Yum.

Chicken rice soup that is super duper easy and amazingly good.

Start with a bit of Bouillon.  MSG free, of course.   Add 4 Tablespoons to a big pot of water.

Cook your chicken in the boiling water.  I know…gasp…boiled chicken.  It’s good.  Cook it and then chop it up and put it back in the water.

While the chicken is cooking start making that rice tender!  Rice.  Brown.   Read the back of the bag to see how the rice brand would have it cooked.

So, the chicken and rice are cooking.  Good.  Grab the celery, carrots, and onions.  There were onions in this recipe…they must have skipped the photo shoot!

Chop them up.  Saute the carrots and onions.  Onions will turn into a light brown caramel color.

Add the sauteed onions and carrots to the pot of chicken broth and chicken.  Then add the chopped celery.  Let boil for 5 minutes so that the veggies become a bit soft.

When the rice is soft add it to the pot too.

And then…you are done.  I am re-looking at these pictures remembering how good this was…I think we will have this for dinner tonight!  This. Is. Good.

Ingredients

  • 3 Breasts of Chicken
  • 2 Cups of Rice
  • 6 Carrots
  • 3 Stalks of celery

  • 8-10 Cups of water

Instructions

    This has been a staple in our home ever since you served it for us for dinner forever ago! I love it! And I can’t believe how easy it is. I still do mine your crock pot version – just throw it all in (except rice) and let it cook for 3 or 4 hours. Then add rice before serving. Perfect for those busy days when you are running around all day because then you come home to yummy homemade chicken noodle soup for dinner! Thanks for teaching me how to make this, Alison!

    Your soup sounds good, but I have found that you can make the broth, and bring to a boil, and then if you will bake your chicken, till tender, that baked chicken added to a broth, seems to give it a better flavor. And I had a mother that always pressure cooked the chicken to make soup, which I did for years, but after reading one of Barefoot Contessa’s cookbooks, she baked it, and I like it so much better. Thanks, you have a nice site.
