FYI – Ripe bananas freeze well.  Mash, adding 1 T lemon juice for each cup of banana to prevent them from darkening.  For this recipe, freeze in 2 cup quantities

I’ve been noticing that Shelley, the amazing Kitchen Designer, is the one doing most of the cooking posts. You ARE an amazing cook! (You must have learned in from your mother.) something I tried just a few days ago – I sprayed the inside of muffin papers with cooking spray, and no more chunks of muffin got stuck in the paper!

  3. I love chocolate chips in banana muffins or any muffin for that matter :)

Hi, love your site. Its very inspiring and so full of good stuff. Love your post on the Banana-nut muffins and I am downright tempted to make this right away. I live in Mumbai, India and Bisquick is not available here. What is a good substitute that will give me similar results as the one above? Pls do’t keep me waiting too long (already dreading the time difference) as the temptations is too hard to resists :-)
    Thanks…

  19. Shelly says:

Yummy! Just found this site/recipe! Question – can these be frozen? and if so, any tricks? IF/WHEN I bake, I usually make it an all day event, but since there’s only 2 us at home, the baked goods need to be able to be pulled out of the freezer –

  20. Katie says:

I just had so much fun making these with my son this morning – great recipe!

  21. Heather says:

These are so good! I have made about 6 batches of these since I got the recipe about a month ago. My whole family loves them and are a great quick breakfast.
