Okay, so I know this isn’t very original – but it is one of my VERY FAVORITE things to receive from neighbors (hint, hint to my neighbors).  I don’t care what kind, sweet bread, wheat bread, white bread, rolls, breadsticks – whatever – I just LOVE bread, and I am sure your neighbors will as well!

My mom and dad always made home-made banana bread to give to their neighbors.  It is DELICIOUS – crispy on the outside and soft and yummy on the inside.  You can feel special because I am sharing their recipe with you.

Roger and Pam’s Banana Bread

Yield: 4 loaves

3/4 cup butter

3/4 cup butter flavored shortening

3 cups sugar

8 mashed bananas

4 eggs

2 tsp. vanilla

4 cups sifted flour

2 tsp. baking soda

1 1/2 tsp. salt

1 cup buttermilk

1 1/2 cups pecans or walnuts (optional)

Preheat oven to 325.  Cream butter and sugar thoroughly.  Add bananas, eggs and vanilla.  Sift baking soda, salt and flour into the banana mixture, alternating with the buttermilk, stir.  Add nuts and mix well.  Pour batter into greased and floured loaf pans.  Bake at 325 for about 1 hour and 15 minutes.  Be sure to check with a toothpick as it gets close (you don’t want it too dry or too wet).  Cool in pan 10 minutes then turn onto cooling rack.

    Recipe sounds yummy. I wondered, is this recipe for full sized loaves or can you use mini loaves to more from your batch?? If so, would the cooking time be different??

      Yes, the recipe is for full sized loaves. You can do mini and do change the time. I am not sure exactly, depending on the size of the mini loaves, but probably somewhere between 20 minutes to 40 minutes.

    This recipe sounds yummy! I’m definitely making this for my neighbours, and maybe some for me too!! Quick question, what is the butter flavoured shortening used for? Is it part of the ingredients or just what you use to grease the pans? Thanks.
